The art
of making oil...
The Azienda Agraria
Malvetani has produced extra virgin olive oil for more than a
century, with methods and shrewdness that are faithful to the oldest
local traditions, dating back directly to the Roman era (“De
agricoltura” by M.P. Catone 234-149 BC). Oil is currently the main product of the company.
Of a golden green colour, with a “fruity” flavour that recalls the
fragrant characteristics of the fresh fruit, it is obtained from
olives which come exclusively from the specialist olive groves of
the company, located in the upper medium hilly belt (250/500 m.
s.l.m.) of the towns of
Stroncone and
Terni in southern Umbria.
The olives are collected from the tree in the initial stage of
ripeness through the method of “hand stripping”, and are squeezed
within 12/24 hours of the harvest, in order to be worked at their
optimum freshness and entirety.
The oil is cold pressed – after suitable grading and washing of
the olives – in a modern company crusher based on the simple
centrifugation of the paste in perfect hygienic conditions.
The valuable varieties of the olive trees, mostly “Moraiolo” and “Leccino”,
the agronomic nature of the lands, the microclimate of the olive
tree slopes, and the most rational farming care, represent the best
conditions to obtain a product that excels not only for its very low
degree of acidity (far lower than the limit allowed by the current
guidelines), but also for all the other chemical-physical and
organoleptic characteristics. This has allowed them to achieve broad
recognition at exhibitions, competitions, and sample stands. In
1997, it was also awarded the prestigious “Dino Villani” prize from
the Accademia Italiana della Cucina.
